The oysters and white wine offer is part of the hotel collection’s seasonal changing menu.
It also gives the head chefs a chance to focus their creative interpretation on a single product. Dishes have been paired with a chilled glass of Chardonnay Aurore 2018 from Château Coing Saint Fiacre in France’s Loire Valley. An unusual cross between Chablis and Muscadet, this steely clean wine has a strong sea-influenced character.
